Potato Rice

TODAY  Day 3 # Blogger Marathon by Srivalli. Last week my neighbor in Saudi gave kapsa rice which is Arabian preparation of rice with chicken. I asked her for the recipe , I just want to learn it. Kabsa is a most famous traditional rice recipe prepared with meat and chicken. But i made it in our own indian style of preparation where i substituted potato instead of chicken and few changes by adding red chilli powder, but the spice powder is the same as she told me. But the taste din't change. they prepare it in a authentic vessel. but here i used rice cooker. have a look. I want to try out kabsa rice with chicken also and will post it soon.

2 cup basmati rice
2 big potatoes
1 cup onion chopped
½ cup tomatoes
3no green chilies
Hand full of coriander leaves
3no garlic (chopped finely)
1 tsp red chilli powder
1tsp lemon juice
2tbsp of oil
2tsp butter
Salt to taste
SPICES (ground separately)
Little saffron
4no cardamom
½ inch cinnamon
½ tsp garam masala
4 pepper seeds (white)
Fried onion
Add water to the rice and leave it for 15 to 20 min.
Take a pan, add oil / butter and sauté onion and garlic, fry well till the onion turns to brown in colour add a tsp ful of red chilli powder then tomatoes, green chilli and coriander leaves. 
 Fry well add the spice powder and salt fry till all mix well.
 Then add required amount of water. When it comes to boil transfer the mixture to rice cooker.
 Add rice , mix well and close the cooker. When the rice cooker comes to warm add lemon juice. Mix well. Garnish with fried onion .Serve hot with raita / cauliflower fry.

Chicken Biriyani (dhum style)

TODAY  Day 2 # Blogger Marathon by Srivalli  and im running with 11 other bloggers. My theme for this time is Seven days of rice. 2nd day rice variety is chicken biriyani which i prepared today morning for my daughters birthday. I used to prepare biriyani in manyways by searching all other blogs.Today i did it totally different way - where i marinated the chicken and added to the gravy. Dhuming it in electric oven, so that gravy will not stick to the bottom of the vessel and rice will cook evenly.
1 kg Basmathi rice (cleaned and washed)
1 kg Chicken
for Gravy
400 g Onion medium ( chopped finely)
400 g Tomatoes (chopped)
4 T Ginger & garlic paste
6 nos Green chilli
1 bunch Corriander leaves (medium bunch)
1 bunch Pudina leaves (small to medium bunch)
2tbsp Red chilli powder
1½ cup Oil
Salt to taste
3 tbsp Lemon juice (increase or decrease according to taste)
1½ cup Curd
1 pinch Red colour powder
2tsp garam masala
Ghee (for drizzling)
For marinating chicken
2tbsp red chilli powder
3tsp chicken masala
½  cup curd
wash and soak the rice for about 30 minutes.

Heat oil in a hard bottem vessals. Add the onion and saute till brown. Add the red chilli powder and saute well, add the Marinated  chicken then add ginger garlic paste, add the tomatoes, corriander and pudina leaves, green chilli, saute well.

Now add curd and salt. Mix well. Add 1 cup of water. close the lid and cook well till the chicken is cooked and oil leaves the gravy.
 Cook rice with enough amount of water in separate vessel or half coko the rice in rice cooker. Add enough amount of salt. for the rice separately.keep the cooked rice aside.

  As soon as the gravy is done and rice is cooked. in a seperate vessal first add  little amount of gravy and then add the rice to the gravy and do the same way again. u can find two layers of gravy and rice.

 Drizzle the ghee on the top of the rice. Sprinkle the red colour powder with little water.Cut the rice in four half like cutting the cake and close the lid.

 Dum the biriyani in electric oven. pre heat the oven with 150degree then keep the rice for dhumming. Dhum the biriyani for 30 min. then remove and mix well. Serve hot.

Coconut rice /Thengai sadam

TODAY  Day 1 # Blogger Marathon by Srivalli starts and im running with 11 other bloggers. My theme for this time is Seven days of rice. so here i starts with my first rice recipe which is my favourite.Coconut rice.... There r several ways of making it. This is simple and easy way.
Rice 1 cup
Grated coconut ½ cup
Slited  green chilli 2no
Mustard seeds 1tsp
Urad dhal 1tsp
Asafoetida powder 1tsp
Curry leaves few
Coconut oil for seasoning
Sugar ½ tsp
Salt to taste
Cashewnuts few (roasted in ghee)
Cook 1 cup of rice with little salt and cool it.

Heat a pan, add coconut oil, splutter mustard seeds, urad dhal, asafetida ,green chilli & curry leaves. Add it to the rice.

With the same pan add little more oil and fry coconut with ½ tsp of sugar. 

Fry till the coconut changes its colour. Do not fry till dark brown. Add the coconut to the rice. Mix well.
At last add the cashew nut and check for salt. Mix well.
Serve with papad/ chips..

Barley Dosa

Im now posting today's breakfast of mine. When I saw the barley for breakfast announcement of priya, I immediately soaked the rice / barley and urad dhal. Actually barley is very good and  healthy instead of con-gee, we can have as dosa. Now the dosa is ready and here we go for the recipe.
Barley - 1 cup
Raw Rice- 1 cup
Black gram (Urad dal) - 1 cup
Salt as per taste
sesame oil (nallennai) or ghee for brushing
Asafoedita ½  tsp
pepper powder ½  tsp
curd 1 tbsp
Soak the rice, barley and urad dhal overnight or for 9 hours,Actually barley takes a long time to soak.
First grind urad dal.Rice and barley together. Add water as required for making normal dosa.
When the batter is smooth and ground. Mix the urad dhal batter with rice barley batter with your hands. Do not use ladle. Beat well with the hands. Add salt while mixing. Keep it undisturbed for fermenting for 8 hrs. When the batter rises, mix gently. 

take a bowl add the needed batter, check for the salt, add curd, asafoedita, pepper powder. Mix well keep aside for 15 min. then now heat the tawa, wipe well with a cloth. 
Take  2 ladle of batter and pour it on the tawa. Spread it in circular motion and close the dosa / cook for a min. then brush it with oil/ ghee. Do not turn the dosa.

Once brown and cooked, remove it . Roll it and serve hot with sambar / chutney. Only the colour of the dosa will be light yellow. Taste is good as normal dosa.

Cabbage /Horse Gram clear soup

Cabbage/horse gram soup is  for losing weight . I am having this everyday morning instead of my breakfast. Cabbage is a wonderful vegetable and I love its taste in salads. It is a good source  for weight loss. Then horse gram as u all know its also used for weight loss. When i was in chennai my mother used to prepare this for me. I just want to share this recipe with u. here no oil, no seasoning. Weight conscious persons just have a look. Give a try. Reduce weight.
Shredded Cabbage 1 cup
Chopped Small onion ¼ cup
Chopped Tomato ¼ cup
Horse gram ½ cup
Salt to taste
Pepper/jeera powder as per taste
½ inch cinnamon
Minced ginger 1tsp
Finely chopped garlic 1tsp
Corriander leaves finely chopped  2tbsp
water as required for soup.
Dry roast horse gram in cooker. When it gets roasted add water and pressure cook.
Strain water from pressure cooked dhal and 
Grind the horsegram in to paste. Keep it ready.
Take a pan, Add cabbage, onion ,garlic/ ginger, corriander leaves  and tomato with cinnamon. Add the horsegram water and 1 cup of water. Boil the vegetables.

Add salt while boiling. When its starts boiling briskly then add pepper powder .

And 2tbsp of horsegram paste. Mix well. Keep it in sim for some time. 
Then transfer the soup to a soup bowl. Then have 1 cup for ur breakfast. With in a month u feel the difference in ur weight. 

Chilly Onion & Cheese Toast

I had some problem with the server yesterday I had many problem after posting... now i solved it and re - posting it today..........

This is a simple recipe and easy recipe made with available ingredients ,mostly prepared for lunch box or evening snacks. kids love the rich taste of onion and cheese. I am sure U all will like this recipe. Here we go.

6 bread slices
5tbsp Tomato sauce
1 big onion (chopped finely)
2 green chilli (chopped finely)
½ cup grated cheese
Butter for toasting
Cut the outer brown layer of the bread cos few kids don’t like that taste.
Now apply 1 tbsp of sauce on one side of the bread
, add onion and chilli. Now add the grated cheese. 
More cheese more taste.

 Nicely press the toping with another slice of bread.
Now prepare rest of the bread in same procedure. Heat the tawa. Here I have used butter for toasting.
It gives awesome taste. First add the butter and allow it to melt. then keep  one set of  bread.
Toast one side nicely till golden brown, by pressing it on top with the dosa Spatulla .Width of the toast should be very thin so press well. Turn it to the other side and toast again. while turning it add 1/2 tsp of butter again in the tawa then turn the bread.
Toast both the sides by pressing it nicely. Remove it from tawa.

And  cut the toast in to 4 half. as shown and serve it hot or pack in the lunch box. Kids special recipe.

Cheezy Mini Samosa

For tiffin today i made samosas for my daughter by using ready made strips of samosa paper. it is easy to make with it. she loved it and continuously asking more. it was really cheesy and will love it. make small samosa so that they get interested.

10 no Ready made samosa strips (cut in square shape)
Stuffing Masala
1 cup grated cheese
1 cup Bengal gram flour
3 tsp Oil
4 cup Onion (chopped well)
1 tsp Red chilli powder
1 tsp Jeera powder
½ tsp Garam masala powder
2tsp lime juice
salt to taste
a pinch of sugar
Mix Bengal gram flour with little oil., salt and just enough water to make a nice dough.
Make thin chappathis out of the dough and roast on a frying pan with out oil till crisp.
Cool and make a powder out of it and sieve well.

Fry onion in oil. When it turns little brown add salt, chilli powder, jeera powder and garam masala at last add lime juice, powdered gram chappathis . keep aside .
Make maida paste for sticking.
Making samosas
Take a square strip of samosa paper and  make a cone pocket in one end of it.
Stick the pocket with the maida paste.

Keep little masala inside .first little cheese and masala  then again cheese and masala by one. 
so that u get a layer with cheese inside.

Fold the strip like a cone (kids will love the shape . At the end apply maida paste to stick cone opening. Prepare samosas in the same manner and keep ready.Heat oil in a pan for deep frying and when oil comes to the perfect heat for frying add 2 - 3 samosas at a time for
texture inside

Serve Crispy hot samosas  with tomato ketchup.
