This kind of plantain fries are interesting and tasty . And I used to make it as a side dish for vatal kuzhambu. It is not very hot like other fries. Here there is a combination of tamarind juice and this makes a special flavor in the fry. Green plantain fries are of different types and I am now going to post my first post of green plantain,
This is my mother’s recipe, she used to make it often .i can say this is an authentic recipe too. I am a fan of this fry and I am glad to share with all.
Green plantain ( Vazhaikkai) – 2no
Tamarind juice – 1 ½ cup (not so thick)
Salt to taste
Turmeric powder – 1 tsp
Mustard seeds – 1tsp
Urad dhal – 1tsp
Red chilli – 4no
Curry leaves – few
Take green plantain and cut in to two halves. Peel the skin with the peeler or knife. Cut in semi circles.
Take a wide mouth pan with the tamarind juice, Add turmeric powder and salt. Add the cut green plantain. Boil for 2min or till half cook. Do not over cook. Strain the plantain well.
Take a deep curved pan, Add oil for seasoning. Splutter mustard seeds with urad dhal, curry leaf and red chili.
Add the half cooked vazhakkai, toss and mix well. Keep it in sim for about 2min. switch off the flame and serve hot.
