Kathirikkai Kotsu / Brinjal Kotsu

   Brinjal Kotsu is one of my favorite side dish,and its very tasty also. I used to prepare this instead of usual sambar.This takes less time also to prepare, no need of dhal so it is an easy preparation, with the available ingredients at home. Feeling happy to share one of my favorite dish with u all..

Brinjal (cut lengthwise) ½ cup
Onion (slice lengthwise) ½ cup
Mustard seeds 1tsp
Fenugreek seeds ½ tsp
Asafetida powder ½ tsp
Greenchilli 2 no (cut lengthwise)
Red chilli 2no
Turmeric powder ½  tsp
Kuzhambu chilli powder 1tsp
Tamarind juice (thick)½ cup
Jaggery (powder) ½ tsp
Curry leaves few
Salt to taste
Add oil in a pan, Splutter mustard seeds , fenugreek seeds, red chilli, green chilli and curry leaves. Add onion sauté till pink colour.

Now add brinjal,little salt. Sauté till tender.
Now mix kuzhambu powder fry well. Add tamarind juice/ little water. Boil well. Last add little jaggery. Allow to boil in sim for 2 min. Serve hot with rice upma/dosa/idli/pongal.

hmmm... i love kathirikkai gosthu, we also add a powder for this recipe..
