Barley - 1 cup
Raw Rice- 1 cup
Black gram (Urad dal) - 1 cup
Salt as per taste
sesame oil (nallennai) or ghee for brushing
Asafoedita ½ tsp
pepper powder ½ tsp
curd 1 tbsp
Soak the rice, barley and urad dhal overnight or for 9 hours,Actually barley takes a long time to soak.
First grind urad dal.Rice and barley together. Add water as required for making normal dosa.
When the batter is smooth and ground. Mix the urad dhal batter with rice barley batter with your hands. Do not use ladle. Beat well with the hands. Add salt while mixing. Keep it undisturbed for fermenting for 8 hrs. When the batter rises, mix gently.
NOW WE CAN PREPARE THE BATTER BEFORE POURING IN TO THE TAWA.
take a bowl add the needed batter, check for the salt, add curd, asafoedita, pepper powder. Mix well keep aside for 15 min. then now heat the tawa, wipe well with a cloth.
Take 2 ladle of batter and pour it on the tawa. Spread it in circular motion and close the dosa / cook for a min. then brush it with oil/ ghee. Do not turn the dosa.
Once brown and cooked, remove it . Roll it and serve hot with sambar / chutney. Only the colour of the dosa will be light yellow. Taste is good as normal dosa.
