Cabbage/ Cauliflower Curry

Easy to prepare, Method is also fast, less timing, just give a try.  Now a days most of us keep the cut vegetable ready at home like shredding the cabbage storing it, we cut the cauliflower and store it, including all the vegetables we prepare and store it when we have time. I used to keep the vegetables ready at home so that i can prepare dishes in no time. it actually saves time and i can spend some time with my daughter after she comes from school.  I prepared it yesterday for chapatti it took me around 10min for marination, 5min for frying and  5min for pressure cooking . It is a semi gravy type not watery or not very thick.

Shredded cabbage 1 cup
Cauliflower 1 cup
Potatoes/ carrot ½ cup (optional)
Coriander leaves handful
Chopped onion ¼ cup
Chopped tomato ¼ cup
Red chili powder 1tsp
Garam masala according to taste
Coriander powder 1tsp
Pepper/jeera/aniseed powder 1tsp respectively
Vegetable masala 2tsp (available in shop)
Turmeric powder ½ tsp
Salt to taste
Jeera (whole) ½ tsp
Oil 1 tbsp
lemon 1no. (optional)
 Mix all the spices with salt in a bowl. Add vegetables and marinate for 10min.
 Take a pressure cooker. Add oil splutter jeera, add onion and fry till golden brown. Add tomatoes and little salt. When oil separates add the vegetable mixture, fry for few min  and add water.When it comes to boil, close the cooker and  leave it for 2 whistle and switch offThen open the cooker and mash the vegetables well and leave it in sim for another 2min.When it becomes semi dry, transfer in to the serving bowl, Squeeze out lemon on top and garnish  with coriander leaves. Serve with chapatti/ poori.We can roll it out in chapatti, kids will love it.
