Recipe Marathon # 2 - 14th day -Chicken Samma

Today is Children’s day / Happy Children’s day and 14th day of Recipe marathon by Dk. Chicken Samma (gravy) is a traditional Nagai district Recipe. Here the recipe for u Its different!!!!


For Frying
500gm Chicken
3tsp Pepper powder
2tsp Jeera powder
1 ½ tsp Red chilli powder
¾ tsp Turmeric powder
3tsp Ginger/garlic paste
salt to taste
½ no Lemon

For Masala (samma)
2no Onion (finely chopped)
2no Tomato big (finely chopped)
5no Green chilli
1no lemon
Hand full of coriander leaves
½ cup Ground coconut paste
2tsp Ginger garlic paste.
2tsp Pepper powder
1 ½ tsp jeera powder
2tsp Red chili powder
¾ tsp Turmeric powder
2tsp Coriander powder
1tsp Kashmiri chili powder
2tsp Curd
¼ cup Oil

Mix the spices in lemon juice and marinate the chicken for frying for 2 hours.
And fry the chicken in oil till half done.

Heat oil in a pan, add onion fry till done. Add ginger garlic paste, green chill, chill powder, Tomato and slightly mash well,
Add all spice powders (except coriander powder), curd, coriander leaves.
Mix coriander powder and coconut paste together and add to the gravy. And at last salt. Add in the same order.
Now add the fried chicken. Mix well. Add lemon and half cup water. Keep in sim and boil
Keep till the oil leaves the gravy. Serve hot with Rice.

Recipe Marathon # 2 - 13th day -Chinese Fried Rice

Recipe Marathon Day 13. another special recipe for today....:)
Vegetable fried rice is always favourite for all... there r many way of making this rice item. here is the recipe which i used to do frequently.

1 cup Basmathi Rice
1 bunch Spring Onion
2no Carrots
12no Beans
150gms Cabbage
1 or 2 Capsicum Big
½ tsp Ajinamoto
½ tsp White Pepper powder
½ tsp Garam masala.
Salt as required
2 or 3 tsp Soya Sauce
1tbsp Caramalised Sugar syrup
4 tbsp Oil

Boil rice in 12 cups of water with oil and without salt. Cos we will add salt in vegetables and Soya sauce contains salt. If the soya sauce does not contain salt. Then add salt in the rice. Cook rice till half cooked and drain thouroughly and allow to cool.
Cut the vegetables in evensize very very small pieces. Cut spring onion into 1 inch long pieces. Heat oil in a broad frying pan and fry onions, carrot capsicum, cabbage, onion steam. While frying vegetables add ajinamoto.and garam masala Fry in high flame for few minutes, Add the Soya sauce and add the rice, pepper and salt (if necessary).
Sprinkle soya sauce and fry in high flame. Serve hot with sauce or fried chicken.

Recipe Marathon # 2 - 13th day -Pav Bhajji Masala

Recipe Marathon 13th day todays special is a fast food recipe.... here we goFast food lovers special is Pav Bhaji....I love this recipe and will have when ever i go out to fast food in chennai...i tried myself here in baku...lucky i got the pav bun here in one indian shop.:)

¼ kg Potatoes
100g Peas
3 no Carrots
½ no Cauliflower
100gms Beans
3no Tomato
2no Onion
1 big Capsicum
½ tsp Turmeric powder
Salt and sugar
½ tsp Red chilli powder
1 ½ tsp Pav Bhaji masala
1 tbsp Dhania powder
2no Green Chilli
½ inch Ginger
5 clove Garlic
Cut all the vegetables in to small piece except potato and peas.
Pressure cook all the vegetables
Peel the potato and mash. Melt butter in a shallow pan , season cumin seeds add onion , fry well.
Add ground masala, then add cut tomatoesand fry till it is mashed. Add mashed potatoes, capsicum, cooked vegetables, turmeric powder and all spice powders.
Pour enough water to make a thick gravy.
Take two baddles and mash well with the vegetables thoroughly.when boiling.
When the gravy becomes thick, serve hot with garnished coriander leaves .and finely chopped onions and lime pieces.

How to serve with Pav :
Cut the Pav Bun in to half
Apply Butter in tawa. And fry bun in and out.
Put little masala inside and serve with little more masala as shown.

Nawabi Paneer curry

Nawabi Paneer curry is a tasty and yummy recipe. For parties and get together we can prepare this dish in the main course with chappathi or parathas. We use cream and paneer both in this recipe so it is very heavy dish. This recipe is a treat for paneer lovers.
200 gms Paneer
1 cup Cooked green peas
4 cloves Garlic
1 inch Ginger piece
2 tbsp Chopped Cashew nut
1 no Big Onion (chopped)
1 no Capsicum (chopped)
½ cup Coconut milk (medium thickness)
4 no Green chillies
1 no Bay leaf
2 tbsp Curd (beat nicely)
½ bunch Corriander leaves
1 tbsp Cream
Salt to taste
½ tsp Cumin seeds
3 no Clove
1/2tsp turmeric powder
3no Cardomens
1 tsp Chilli powder
4 tbsp grated coconut
Cut paneer in cubes and deep fry. And immerse in water (this helps to keep paneer soft)
Soak cut cashewnuts in boiling water for 1 hour.
Heat ghee in a shallow pan and fry onions till golden brown, Add ginger and garlic, capsicum , bayleaf, ground masala and fry well for 2 min.
Add green chillies, coconut milk, curd, cashewnut, paneer, peas , salt and coriander leaves. If needed add little water .
Sim for 10 min. At last add the whipped cream and bring to boil.
Serve hot along with parathas nans and chappathis.
We can modify this recipe by using potatoes instead of paneer. Or we can add all vegetables and make curry.

Ladies Finger Varuval

I tried a new recipe with vendaikai (ladies finger). it was tasty and crispy. appadiya sapidalam. children will love this dish very much.

250 g Ladies finger(Vendakkai)
1 tsp Red chili powder
1 tsp Jeera powder
1 tsp Lemon juice
1 tsp Corn flour
Salt (as per taste)
Oil (for deep frying)
Cut vendaikai length wise and add all the ingrediants except oil.
Sprinkle little water and mix well.
Heat oil in kadai. add this mass mixture little by little.
Deep fry nicely.
And serve it hot.
We can serve it as side dish .
U can try out this dish with potatoes and green plaintain (Vazhaikkai) also....

Recipe Marathon # 2- 12thday - Green Gram Medhu Vadai

Today is the 12thday of Recipe Marathon by DK and todays special is Green Gram Medhu Vadai
Green gram (pacchai payiru) is full of proteins. long time i had an idea of trying vadai out of green gram. rececntly i tried it for evening snack it came out really good and tasted yummy. try it out :)
¼ cup Whole green gram (pacchai payiru)
1 cup Urad dhal
1½ T Rice flour (add while grinding)
Salt to taste
1 no Onion ( finely chopped)
2¾ tsp Green chilly(chopped finely)
1½ Ginger (chopped)
2 T Curry leaves (chopped)
3 tsp Corriander leaves (finely chopped)
1 tsp Pepper corns (crushed)
Oil for deep frying
Soak urad dhal and whole green gram for more than 1 hour.
Pressure cook the green gram for 1 whistle with 1/4 cup of water. And strain the water from pressure cooked green gram and keep aside. (use the pressure cooked green gram water for grinding.)
Grind green gram and urad dhal to gether.( u will get a light green colour dough)
Grind green gram first for a minute with out adding water.Then add urad dhal and sprinkle very little water to get a smooth and fluffy dough. add salt at the end of the grinding. so that it mix well.Add the vadai dough to the onion, green chilli, corriander, ginger, curry leaves and pepper mixture.Mix well.
Heat oil in a kadai. When the oil is heat enough. then make small shaped vadai out of the dough and add little by little to the hot oil.
Fry the vadai till golden brown. strain well.
Serve hot with chutney.

Recipe Marathon#2 - day 11-Chhole Masala

 Today is 11th day of recipe DK.....Todays special is Punjabi Chhole.....
Punjabi chhole masala is very popular north indian masala . I had it in once in a punjabi dhaba in chennai. Liked to try it out my self. So found out this authentic punjabi recipe from a book and tried out got a real authentic taste out of it. try it out u will feel the difference.
2 cup Chick peas[soaked and well boiled]
Salt to taste
2 nos Green chilli (slit open)
1 cup Onion (big size, roughly chopped)
1 cup Tomato (big) chopped
1 inch Ginger(grated)
2 clove Garlic
1 tsp Red chilli powder
Oil and ghee as per need
2 T Corriander seeds
1 tsp Black pepper corns
2 tsp Cumin seeds
2 Black cardamom
1 T Anardana (seeds of wild pomegranate),avoid if not available
2 Cloves
1 Teja patta (similar to bayleaf) or bayleaf
3 Dry red chillies[adjust as per taste]
1 inch Cinnamon stick/dalchini
1 T Jaggery (powdered)
3 no Green chilli (slit open)(deep fried)
4 tsp Lemon juice(can decrease r increase as per taste)
Soak chick peas over night and drain the water.
Pressure cook the soaked chick peas with little water. If necessary add the soda.
slightly roast the Ing 2. with out oil in a pan and grind it to powder. do not roast the masala too much.
Grind onion, garlic and ginger together and keep aside. Grind tomatoes like thick puree.
deep fry the 3 green chillies and keep ready for garnishing.
Heat oil and ghee in a pan. Add onion mixture , 2 green chillies (slit open)and fry well till it turns its colour.
Add the tomato puree and fry well till it mixes well.
Add red chilli powder, ground special masala and salt.
Fry till the oil seperates and add the chick peas and little water to make a gravy.
Add the jaggery powder.
Close the pan , cook for 5 min in sim till the oil seperates from the gravy.
Serve hot with poori, bhatura, or naan.Garnish the chhole with Deep fried slitted green chillies and lemon.
We can use store bought Cholle masala.But its better we grind the masala. There is some difference in that..

Orange Punch

Orange punch is a cool drink with orange, lemon and ginger..have this juice.really your body will thank u after all the stress and tiredness and will reduce the heat in your taste very good .......Actually i tried it with sugar first. After hearing Challenge event i substituted Honey instead of Sugar so here the recipe for releishing....
2 cup Fresh orange juice
½ cup Lemon juice
3 T Ginger juice
4 T Honey (can increase or decrease depending on your taste).
A pinch salt (optional)
1 cup Crushed ice cubes
Extract juices from oranges, lemon and ginger.Mix all the juices together, Add the sugar and mix well till the sugar dissolves ,add a pinch of salt. Add the ice cubes. serve it in a glass. enjoy the orange punch.
Very easy to make.

Recipe Marathon#2- Day 11- Potato Kaliya

11th day of recipe marathon by DK here i give one more recicpe for marathon.Potato Kaliya is very famous dish of tanjore/nagai. It is one of item in the maincourse menu i mean with ghee rice/neyyi chorru . we can substitute this item with roti also. really a tasty dish. Curd and coconut, green chilli will enrich its taste. here is the treat.

250gms Potato
1no Onion
1no Tomato
5no Green chilli
Handful coriander leaves
½ tsp Turmeric powder
1 ½ tsp Pepper powder
¼ tsp Jeera powder
1tsp Corriander powder
½ tsp Red chilli powder
salt to taste
¼ cup Coconut paste
2tsp Ginger garlic paste
2tsp whipped curd
2tbsp Oil
Heat oil in a pan, Add onion fry well
Add ginger garlic, green chilli, tomato, Add all the spices. Add curd.
Mix well and add coriander leaves.
Add potato and Add water for cooking potato (1/4cup Water will do)
When potato is half cooked Add coconut paste n cook till the oil leaves the mass.
Serve with Rice or roti..

To Make this dish as non- veg we can add Goat Liver, with the potatoes

Recipe Marathon # 2- 10thday - Dates Pacchadi

10th Day of RecipeMarathon by Dk Todays Special is Dated Pacchadi / Puliipu Pacchadi. This is very special dish in Nagai District (Nagapattinam). I have to thank my friend Najila for giving this recipe.

12 no Dates
1no Onion
1no Tomato
6no Garlic clove
1no Carrot (grated)
Coriander hand full
¼ cup Raw mango (grated)
1tsp Turmeric powder
1tsp Red chilli powder
1 ½ tsp Pepper powder
1tsp Jeera powder
½ cup Tamarind extract
1tsp Mustard seeds
Curry leaves few
2tsp Oil
1T gingerly oil
2tsp Ginger garlic paste
Salt to taste
Add oil in kadai , splutter mustard seeds, curry leaves. Saute onion, Add ginger garlic paste, tomato Add all the spice powder.
Now add dates, garlic, carrot, mango and coriander leaves. Mix well in oil.
Now add tamarind extract. Add little water. When it boils and cooks well add gingerly oil.
Cook till the oil leaves the mass.
Serve as Side Dish for Ghee rice / with Main course.

Recipe Marathon 9th day -Mixed Vegetable Paratha

Today is the 9th day of Recipe Maraton BY Dk. Todays Special is Stuffed Paratha.Stuffed parathas are the healthy and ideal breakfast option. Vegetable paratha is enriched with potato, cauliflower, carrot, beans etc. Make the paratha with lot of pure ghee, serve it hot and see the difference. Kids who dont eat vegetables will eat this paratha.
1½ cup Wheat flour (chapathi flour)
1 cup Maida flour/ all purpose flour
1 T Curd
1 tsp Oil/ghee
1 cup Mixed vegetables (cauliflower, carrots,beans, cabbage, peas)
1 no Boiled potato
1 no Onion ( finely chopped)
1 tsp Garam masala powder
2 tsp Lemon juice
Corriander leaves (hand full)(finely chopped)
Salt (as per taste)
Ghee for frying paratha
3 nos Green chillies
1 clove Ginger
2 clove Garlic
Sieve wheat flour and maida with a little salt. Add curd and oil.
Knead a soft dough.Keep aside for 20 min. Divide into equal portions.
Grind green chilli ,garlic and ginger in to fine masala paste.
Cook the vegetables. Now add chopped onion, coriander leaves , garam masala and ground chilli, salt into one cup chopped and cooked vegetables and mash them nicely. add the lemon juice. make equal size balls out of the vegetable mixture.
Take one portion of the dough, roll out into small chapati, place one portion of vegetable mixture into the centre of the chapati and seal carefully on all sides. Roll out again into chapatis about half cm thick dusting with flour to prevent the chapati from sticking the board.
Bake or fry on tawa by adding ghee to both sides till nicely golden brown.
Serve hot with pickle.
