Recipe Marathon # 2 - 5th day - Spicy Brinjal Kootu

5th day in Recipe Marathon todays special is Brinjal kootu.....its Different.....have a look.....

Brinjal is my favourite vegetable....i used to make lot of dishes with it...this is a little bit new dish which i learnt it from my the brinjal is marinated and then fried and cooked in tamarind extract....really it was tasty....

Ingrediants 1
200g Brinjals
2tsp Red chilli powder
1tsp Jeera powder
1tsp pepper powder
1tsp Ani seed powder
1tsp Corriander powder
½ cup Tamarind extract (medium thick)
Salt to taste
Ingrediants 2
2tsp mustard seeds
2tsp jeera seed
(dry roast in a pan and make fine powder)
Mustard seeds and curry leaves
Cut brinjal lengthwise and Mix all the given spices with salt and make a paste.
Marinate brinjal in it for 15 min
Deep fry the brinjal and keep aside.
Heat 4 tsp oil in a pan and add mustard seeds, curry leaves, now add brinjal.
Sprinkle water on it, add tamarind extract and add the dry roasted powder. Check for salt.
Fry well till oil leaves the mass . Serve hot as a side dish for Bisibelebath or rasam.
